Su cocina ha experimentado una revolución que se aprecia tanto en la calidad como en el estilo.

Restaurante El Rumba, Navacerrada.

Allá por 1972 Milagros, Antonio y Charo decidieron convertir su pequeña frutería en un restaurante de comida casera con habitaciones para alquilar. Tenían una casita dentro del establecimiento en la que vivía Charo. Fue el inicio de lo que hoy se ha convertido en un referente de la sierra de Madrid, que vive un relevo generacional con Jorge y Gema al mando, ejerciendo el de chef y ella de maître.

Arzak, Arola, Sacha, Chicote, Abraham García y el crítico J.M. Bellver (Premio Nacional de Gastronomía) han influido decisivamente en los fogones y la imaginación de Jorge, lo que, unido a la herencia de su madre, da como resultado una cocina casera tradicional con un toque de elegancia y sofisticación, donde las fórmulas aparecen refinadas. Ya ha conseguido una mención de honor de restaurante de fuera de Madrid en los Premios Gastronómicos de Metrópoli, y figura entre las recomendaciones de los críticos de El País, ABC, El Mundo y la guía Gourmetour. Pero lo más importante es que ha conseguido el éxito entre los paladares cerrudos y madrileños que acostumbran a visitar el pueblo. Ni sus raciones dejan de sorprender: crujiente de verduras, huevos rotos sobre base de pisto con patatas paja, ensaladas de estimable calidad y originalidad o bolitas de morcilla y manzana. De segundo, la carta reza desde carnes a la parrilla y pescados hasta las sugerencias del chef, que la viste de llamativas ideas haciendo las delicias de los gourmands.
